As a chef and obsessed foodie I am always on the hunt for quality products and quite often I even get the opportunity to visit some of these fabulous places, which is always exciting and it helps me to honestly talk about a product.  Obviously I love to eat and I love products which have been passionately cared for from start to finish which brings me to this weeks ‘Local Food Hero’ Waitaki Bacon and Ham.

WAITAKI BACON AND HAM

Sue and Gus are great family people with a sense of humour and a big heart, which reflects into their pigs.  Gus and Sue have been pig farming for 32 years which shows in the quality of their pork with exceptional husbandry to the pigs. I find it funny when you talk to them about their pigs as Gus addresses them as his girls, he has so much respect for these animals and pride about their welfare that you can’t help be impressed. 

Now on to the tasty bits their pork products; Waitaki Bacon and Ham have been operating since 2006.  It was the sensible move to make as Gus raises such healthy, tasty pigs that it only seemed natural to take their pork and turn it into their own pork products.  Which meant that Sue and Gus had total control from start to finish of their much loved pork.

What grabs me more than anything is the pure flavour of the pork, it is not tampered with or filled with brines it is exactly what they say it is and that is 100 % pork! Their ham reminds me of my childhood when the ham had a healthy rim of creamy fat and the flavour was reassuring and natural, and when sandwiched between two layers of fluffy bread it was memorable and that is exactly what happens with Waitaki’s ham, it brings back all those memories.

I would like to say thank you for caring so much from start to finish with your pigs and for bringing back ‘proper’ bacon, ham and pork products for us to happily consume with the family.  Thank you!
