Toast has developed a long standing reputation for quality cocktails, local DJs and in general some top notch bartending. Located just past the Octagon on Princes Street, owner Jamie Hughes has created a bar that is understated and relaxed.
Toast serves some of the best cocktails Dunedin, even the world has to offer. Jamie and his team have won numerous awards for their cocktails including the Suntory Cup, Trans Tasman Cocktail Competition, De Kuyper Best Bar Team, Top 10 finishes for Bartender of the Year. Some of Jamie's cocktails have been included in notable books such as La Guida for Galliano.
Jamie and Toast's atmosphere is laid back, he works in a t-shirt and shorts a stark contrast to his early days as a bartender at Copa (his previous bar) he says. As he has become more experienced Jamie who trained as a traditional cocktail bartender has relaxed his attitude towards what people should drink. In his youth, Jamie thought he should be educating people about what to drink in the form of traditional cocktails. However, after some time he came to the realisation that it was up to patrons to choose what they like to drink rather than having his ideas pushed on them. Jamie feels education is still an important part of his role at Toast but now he chooses to approach things in a different way. The bar is a regular meeting place for many of the hospitality community, who are offered support and training by Jamie to further their abilities. On Wednesday evenings the general public are invited to join the Toast team in a cocktail making class, where they will learn to make a particular drink from start to finish in an hour session.
The team at Toast like to keep things local and recommend their Espresso Martini that uses Dunedin based Quick Brown Fox coffee liqueur as one of their favourite cocktails on the menu.
Toast's relaxed lounge bar atmosphere offers something for everyone and is the perfect place to enjoy the unfolding night.
